Working Principle of Industrial Freeze Drying Equipment

The core coffee freeze drying process can be summarized in three stages: pre-freezing, sublimation drying, and desublimation drying.

  1. First, the concentrated coffee solution is rapidly cooled below the freezing point, causing the water to freeze completely and form a stable solid structure.
  2. Next, the sample is heated under vacuum, causing the frozen water to sublimate directly into water vapor, which is then captured by a condensation system. This process eliminates the presence of liquid water, thereby minimizing damage to the coffee's structure.
  3. Finally, residual moisture is removed through a low-temperature desorption stage, bringing the product to a stable moisture content.

Throughout the process, precise control of temperature and vacuum is critical. If the temperature rises too quickly or the vacuum is unstable, it can easily lead to product collapse or loss of aroma.
